AC-EnzyMIQ

Chemical name: Enzymatically Modified Isoquercitrin

CAS No. 977187-64-6

WATER-SOLUBLE ANTIOXIDANT FOR COLOR STABILITY

Prevents oil oxidationInhibits discolorationInhibits flavor deterioration

AC-EnzyMIQ is a natural antioxidant from enzymatically treated rutin of Sophora japonica. The treatment boosts water solubility, making it ideal for preventing oxidation in beverages and jellies. Its strong UV absorption prevents color fading and flavor deterioration.

Function and performance

Radical scavenging and color protection

Laboratory assays and model beverage trials address different aspects of AC-EnzyMIQ performance.

EnzyMIQ natural-color stability comparison from the ANECO flyer

Antioxidant activity

ABTS and DPPH assays showed radical-scavenging activity, increasing with concentration within the tested range.

Color stability under light

Model beverage tests compared color appearance with and without EnzyMIQ during direct sunlight exposure.

Study conditions

The color trials used 0, 50 and 100 ppm EnzyMIQ at Brix 10 and pH 4.5. Colorants included monascin, capsanthin and gardenia green. Exposure times differed between colorants; the observations apply to these test systems.

Application

FAQ

AC-EnzyMIQ questions

Are 50 and 100 ppm universal use levels?

They are concentrations used in the model color trials. The appropriate level depends on the finished product and permitted use.

Does a radical-scavenging assay predict a health effect?

These assays measure chemical antioxidant activity in the test system. They do not establish a health outcome in people.
